Ingredients
1 complete orange, (peel and all but cut the top off where the was stork attached).
6 eggs
250 grams of almond flour
1tsp baking flour
¼ cup of Xylitol or another keto friendly granulated sweetener
2 tsp of Vanilla
¼ cup of poppy seeds
¼ tsp salt
Method
Pre heat oven to 180°C and line or oil spray a muffin tin(s). Makes 12 portion sized muffins or 6 massive I need comfort food muffins.
Cut the orange into segments leaving the skin on (I know that’s a bit out there and yes you did read it right, skin on, it increases the flavour and most of the Vitamin C is in the skin) but remove all seeds (they are really bitter and yuk).
Place the orange segments into a blender or food processor using the blade attachment and pulse until fine but not pureed. Add all the other ingredients and pulse until well combined and smooth (yeah less dishes).
Pour into the muffin molds and place in the pre-heated oven for 18-20 minutes.
Check they are cooked by inserting a clean skewer into the middle of the muffin, if it comes out clean with no muffin mixture attached, they are cooked, dig in… NO let them cool completely cause they taste so much better, and even better once iced.
Icing
115 gm Cream cheese (softened, cut into cubes)
2 tbsp softened butter
½ cup Xylitol or another granulated sweetener
1 tbsp of orange zest
1 tbsp of heavy cream or orange juice (more if needed)
Using a hand beater whip the cream cheese and butter until soft and creamy. Add the sweetener and orange zest, beating again adding the orange juice or cream until the right consistency has been achieved.
