Fruit and Nut Bites

Gluten Free, Dairy Free, Vegetarian.

Perfect for lunch boxes, snacks on the go or a great alternative for afternoon tea.

Ingredients

1 cup Toasted Almonds, roughly chopped

½ cup Paleo Mix or other gluten free seed mix *

¼ cup Dried Goji Berries

¼ cup Dried Cranberries

½ Cup Toasted Coconut Flakes

¼ Cup Maple Syrup

*I like to use the Aldi Paleo mix which includes flax seeds, coconut, almonds,

Method

Preheat oven to 160°C, line a baking tin with baking paper. I use a rectangular tin 17x 24 cm.

Place all the dry ingredients into a bowl and stir until mixed. Pour over the maple syrup and combined until all the dry ingredients are coated with the maple syrup.

Tip the mixture into the lined baking tray, spreading the mixture evenly over the surface. The next part is very important. Cover the mixture with baking paper and use a metal spoon or spatula to push down on top of the baking paper to compact the nut mixture. If the mixture is not compacted enough it may not stick together once cooked. Place tray on the middle shelf of the oven and cook for approximately 30 to 35 mins or until golden. Once finished let cool completely in the tray. Once cold cut into bite sized portions, roughly 4cm by 4cm.
